First off, I'd like to apologize if this has been asked before.
I searched a lot before creating this thread but couldn't find it.
My question is simple; when having multiple doodads or units selected, how do I change for example their height all at once?
I usually double click a doodad to change properties, but this only works for single doodads, since multiple selections get deselected as soon as I click once.
I know that it is possible to change properties for multiple doodads, I just don't know how.

It's not logical to modify x/y of multiple objects, unless you want to stack them altogether. If you want a lot of unit to be on precise x/y position with some kind of system, use trigger to initialize that.

Select all the doodad you want, click menu->edit-> modify properties( or Enter)

Edit: is there a possibility to get this working for X/Y coordinates of objects?

it's logical if you want them all in an exact line. just change either X or Y for all, not both at once.
