Well no it doesn't exactly create a new attachment point per say. It's still attached to the original point but now it's able to be moved. THIS tutorial should help you, though a bit outdated everything in it should still work.
You can actually check to see EXACTLY where they are again though I don't know how off the top of my head. Also he might just have a fallback setup for his attachment point, but you're right it could very well just be up at the top.
It's possible it doesn't have a "head" attachment point. However you can use local offsets to get the helm to fit correctly on the head. And there is no bone viewing or editing in the galaxy editor, though there is a way to view attachment point positions I just don't know how off the top of my head...no pun intended.
