Don't shut down Starcraft 2 (the game) when you're working in the editor. Just hit F10 (to pause the game) and tab to the SC2 Editor. Then when you hit "Test Map" (Ctrl+F9) the map will load a lot faster and your graphics settings are saved.
Some of my graphics settings reset too, after closing down SC2. But keeping the application running works perfectly.
I assume you know how to enable "Fullscreen (Windowed)" :)
Okay, you need to go to File -> Preferences and then head to the Test Document Tab. There will be a box for "Run Game In A Window."
I don't believe however, you have any control over the default launch size of the window. You just need to quickly grab the corner and drag the window larger.
Edit: Seems like it retains the window size that you drag it to, even after closing the game and relaunching from the editor.
Seems that I can only get it to run on full screen without windows (takes ages to alt-tab in and out) or in a small window. How I can change that?
Change the settings in the options after the game opened.

Yeah, I know that but takes a couple minutes to change the mode, and you lose that configuration when you close the game. Is pretty frustrating...
Seems ridiculous that you can't change that in the editor >.<
