Depends on the behaviour. Some only allow requirements to be altered while others like the Click Response, Generate Creep and Spawn behaviours allow alot more to be altered.
But do not forget you can link upgrades to stuff via requirements and requirements to validators. So you could just swap one behaviour with another on the upgrade.

For example the Combat - Modification - Attack Speed Multiplier field multiplies with each stack instead of adding so two stacks of 1.5 would give 2.25.

Yeah, the behaviors stacking multiplicative instead of additive is a nuisance. If you really need them to do it additive you just have to make a new behavior for each "stack" of the buff.

You can change the number of applied buffs via the Add Behaviour effect.
eg.: Your upgrade increase the granted HP from the buff X by 30/40/50.
Then change the data value from HP to 10 the start number of buffs granted by the effect to 2 and the addition per upgrade to 1.
Upgrade Level 1: (2+1)*10=30
Upgrade Level 1: (2+2)*10=40
Upgrade Level 1: (2+3)*10=50
Almost everything stacks in one behaviour.
PS: Don't forget to change the maximum stacks of the behaviour.
And be aware that some stacking is multiplicatory.

After about 5 stacks it would start adding more attack speed than if it were adding in a linear fashion.
