I am using a space platform map and want to be able to place my custom buildings in the empty space areas. Is it actually possible with structures, or do I have to switch over to regular units? I still want to be able to select the building.
If I remove the footprints, won't that destroy the possibility to place the structure in the grid? Because that is one of the main reason for me to actually use a structure, but I think that having both is impossible.
Yeah, this should be possible. You'll probably want to duplicate the relevant footprint so the other buildings work normally. Then, in the footprint, change the dropdown from 'Pathing' to 'Placement Check' and go to 'Define sets'. Untick 'No build' from invalid under set one. You may need to change some of the 'Placement Apply' flags as well, I can't be bothered to experiment right now. Then set the footprint to your building.
Beware, removing this flag will allow the building to go anywhere (though it should still grid snap), so make sure you don't allow players to build it!

After removing footprint and setting mover and plane array to fly I could still build buildings
Yeah but when trying to place it in the editor, it can be placed everywhere. It doesn't snap to the grid.

Unchecking somehow seems to disable the grid, but when its on, I am not allowed to place the structure in space.
